Non-Newtonian simply means that it doesn't respond to force in the same way that other liquids do. When you put pressure on this stuff, it becomes hard (as you can see in the video.)
It's actually a rather boring mix of cornstarch and water. So... overly-thickened gravy without the fat.

dan, I totally figured out what it was (even though I had no idea what Non-newtonian was) before we read this. We had a great time and made a HUGE mess of our kitchen playing with the stuff. Wasn't made nearly as well (or in the quanities) as the video though.
